How does the SEPAmatic 410 separator work?
The operating principle of the SEPAmatic 410 Modernpack is based on gentle, mechanical separation of the raw material rather than mincing or grinding. A flexible, highly wear-resistant polyurethane crusher belt conveys the meat to a perforated drum. There, thanks to uniformly increasing pressure, soft meat is pressed through the drum’s perforations, while sinews, cartilage, and other tough fragments are rejected and removed by scrapers.
Importantly, the raw material is only briefly strained in this process – it is not ground, grated, or heated. As a result, it retains the natural structure of the muscle fibers, and the resulting consistency resembles a coarsely minced mass, which is particularly valued in the production of raw sausages and high-quality sausage products.
